Ruby chocolate is the newest member in the cocoa family. The coloration comes from a reaction to citric acid being added during the fermentation process of the cocoa bean. This not only changes the color to a deep pink but brings certain notes out in this chocolate. Notes of cream and berries with a slight tart taste that ends with a light hint of a seed/nut flavor. Ruby chocolate sits in between Milk chocolate and White chocolate around 33-36% cacao. NSM's Ruby Chocolate bar plays off the notes of the chocolate by pairing it with roasted pistachios and a savory chili called Aleppo.
